FAQ How did you find out you are gluten intolerant?

Since I started posting recipes for gluten free foods, I have had a lot of people ask me how I found out I am gluten intolerant.

It all started a week after my birthday in 2010 when I got my MRT results back. I had already consulted with a GI specialist who wanted to run a test to see if I have Celiac sprue AKA Celiac disease. My test results listed 47 food allergies. Wheat was one of my worst reactions. The dietitian I was very helpful in helping me figure out what I CAN eat, offered a few recipes, helped me find creamer for my coffee (since I already know I am lactose intolerant) and helped me search for breads I can eat too. She was awesome!

Spelt, Kamut, Rye, Oats and Barley were on my lists of non-allergy foods. For the most part, in the beginning I ate a lot of fresh veggies, salads, some fruits and vegetable soups. One day I made a veggie soup with Barley and later that day my stomach hurt a little. That night my abdomen hurt so bad I cried, I became quite bloated and I ended up having horrible diarrhea. I chalked it up to having accidentally adding something to the soup that I am allergic to. I went over all the ingredients and couldn't find anything. I was stumped and just brushed it off as a stomach bug and went on with life.

For breakfast, I found that oats are very cheap so I started buying some cheap oats and started having the same symptoms. I eventually just quit eating oats and figured I had developed an allergy to them. I sulked for a bit and then remembered that I had made some dessert type thing with a bag of gluten free oat flour and I had no symptoms when I ate them. I also did fine eating the instant oatmeal mixes by Glutenfreeda.

The next trip to Washington to the dietitian went well. I found some spelt bread that was store bought and had nothing I was allergic to in it. I was so excited that I made myself four pizza sandwiches in the early morning hours, crawled into bed for a little sleep and left for home early in the morning.

By the time I had made it to Snoqualmie Pass, I seriously thought of finding a hospital. My gut hurt so bad it felt like someone was running a grappling hook through my intestines and every joint in my body ached. I felt like crap and I ended up stopping at every rest area and nearly every exit from Bremerton to Spokane. When I finally made it home, I was miserable for a few days and had migraines for the next week. I was sure it was the spelt bread and just threw it away even though it didn't have anything I was allergic to.

I started thinking about what the GI doctor said about celiac sprue and did a little research on what foods on the list that I can eat have gluten. I crossed them off and vowed never to eat them again. The pain wasn't worth it!

The next appointment I talked to the dietitian about my symptoms and how the GI specialist wanted to test me for celiac sprue. Living 500 miles away from my doctors, I just didn't get around to making the appointment because I couldn't get my dietitian and GI appointments on the same week. She explained that it is very possible that I am gluten intolerant.

She highly suggested the test if I wanted it but said that if I avoid gluten before the test, I could come back with a false negative result. She said if I was going to take the test then to eat something with gluten before hand, I think she said the week before? It might have been a few days. OR I could just avoid all gluten since I am obviously gluten intolerant, at the least. (Note: There is such a thing as non-celiac gluten intolerance). I really wanted the celiac test done but I just couldn't bring myself to putting myself in intense pain for a test. So, I opted to just avoid gluten.

Eventually, I would love to have the test done and some day I might actually go through it. But for now, I am very content just avoiding gluten products and not torturing myself.

Gluten Free Biscuits and Gravy

My sister in law, Tammy, made a comment on facebook about southern cooking and it really got me thinking. I found a gluten free biscuit I like but it would be even better smothered in gravy. Being allergic to wheat, I haven't found any gravy I can have. I decided to try making a gravy but wasn't sure how to start. Zack asked what I used for the biscuits and said "buckwheat oat flour". He suggested I try starting with that. I played with it a bit and ended up with a really delicious biscuit and gravy. It was a touch sweet so next time I'll try using buttermilk powder instead of powdered milk. Here's the recipe:

Gluten Free Biscuits and Gravy
You will need:
1 recipe of Buckwheat Oat Amaranth Biscuits
4 TBSP bacon grease with no bits in it.
      (In theory, you can use olive oil, butter or some other grease. I will experiment with that later.)
2 TBSP Gluten Free Buckwheat Oat flour (mix 1 Tbsp Buckwheat flour and 1 TBSP GF Oat Flour)
1 TBSP Pepper
A dash of salt (or more to taste)
2 Cups milk (I used prepared powdered milk)
2 TBSP Arrowroot starch (for thickening)

Make the biscuits according to the recipe. They will be done before the gravy.

Gluten Free Gravy


Start a pan heating on medium heat.

Pour in the grease and let it heat til it's nice an melted. Add the buckwheat oat flour and the salt and pepper. Stir and let it heat for a few minutes. I think I actually let it heat for 5 minutes. Usually I wait til the flour is browning nicely but since Buckwheat is a dark color I couldn't really tell.

SLOWLY pour in the milk while stirring constantly to keep it from clumping. Keep stirring. It will start to thicken a little but mine was still very thin for a gravy. That's when I got the idea to add arrowroot starch.

Take the arrowroot starch and put it in a small bowl. Add some gravy to the bowl and start stirring. Keep stirring until the lumps are all dissolved then pour the arrowroot starch mix into the pan while stirring constantly. It should thicken up pretty quick.

Remove from heat once it starts to thicken but continue stirring for about a minute.

Serve over the Buckwheat Oat Amaranth Biscuits and ENJOY!

My Bedroom Floor Collapsed

It's not as horrible as it sounds, but my bedroom floor did give way and scared the pee out of me. My kids and I were all sitting on my bed as my youngest was showing us a new game demo for a game he has been drooling over for a week. We were giggling over some of the stuff he was doing when it sounded like someone dropped a bunch of wood behind the head of the bed and then I felt it shift. We all looked at each other and my oldest jumped off the bed and I scrambled off my side of the bed as fast as I could. I think that is the fastest I have moved since June 26.

My youngest son was trying to figure out what was going on when my oldest looked at me and said "I know what that was! Mendel, get off the bed." Mendel quickly crawled off the bed and Miles started inspecting something near the head of the bed, stood back up and said "OH! I was right! The floor collapsed!" WTF!? I walked around the bed and sure enough, the floor was bowing downward. Miles pulled my bed out and then the boys moved everything away from the damaged floor area while I tried to calm my nerves.

They moved the shelf away from the wall and moved everything around. My room looks like crap now but we can clearly see a nice sized gap where the floor and the wall meet, or where they used to meet. After a lot of oogling and nerve calming, Miles decided to investigate more. He walked over and stood on the area commenting on how flimsy it felt and his brother was so supportive of his curiosity by encouraging him to jump. Oh my, children! I told him not to give me a heart attack! Instead he settled for Miles putting both feet together in one spot. I was JUST about to explain why that was a bad idea when Miles laughed and said "OKAY!" and put his feet together... and then promptly dropped an inch.

I think I actually tasted my heart as it came leaping out of my throat. Trying to keep the calm-mom-in-the-face-of-danger mode, I said "Miles, why don't you get off the collapsing floor and come over here." The look on his face was priceless as he said "I can't" and laughed nervously. It was a cross between a look that says "this is hilarious" and a look that said "I know I am about to meet the creepy spider family in the basement up close and personal!" I couldn't help but laugh. So I grabbed a hold of him and pulled him towards me.

No one has gone downstairs to see if there is damage down there, and frankly I am not that curious. I am sure someone will go look eventually but it won't be me! Besides having a hurt back and not being able to make it down and up the stairs again, have you actually seen my basement? It is creepy. Not just creepy like a normal creepy basement. My basement looks like the scene to a horror movie. No really! It does. Ever see Texas Chainsaw Massacre? You know that scene with the basement where they go down the creepy wooden stairs to a dirt and gravel floor and it's dusty and dank and cobwebs everywhere. Yea, that is what my basement looks like. It scares the hell out of me!

As if that isn't bad enough, I swear to you the amount of spiders down there is astronomical! There are cobwebs on top of cobwebs. It's like those creepy attacks in the horror movies where you have to move spiderwebs to the side so you can get by. I open the door and I instantly hear shrieking horror movie music in my head. Mostly spiders don't scare me. But a small army led by Aragog living in my basement makes my skin crawl off and leave the basement without me!

Here's the kicker. The genius that built this place had the bright idea to put the breaker box DOWNSTAIRS in the MIDDLE of the basement! I want to find that sadistic bastard that had that epiphany and make them go downstairs and flip the breaker in the middle of the night because I sure the hell am NOT going down there. You could tell me there is a chunk of gold down there and I'll do the same thing as when the breakers trip. I'll call my brother and wait for him to get off work. He'll go down there.

Better Blogging: Interlinking Posts

Today's project on the 31 Days to Building a Better Blog is to interlink your posts. Basically, when you make a post and you have an earlier post about the same topic, you add a link to the older article in the article you are writing.

On my blog, I post about many different topics so I couldn't find a lot of them to link. Instead, I went to each recipe page and added a link at the bottom to the page that has the list of recipes. It says:

I am also going through and cleaning up the tags for each post which connects all the posts of a similar topic. For example, by clicking the tag for 31 days to a better blog, you will end up on a page for all my posts about this project of building a better blog.

As I build my blog with more posts and topics, I will be able to interlink better. For now, I will be printing off my blog post titles and slowly finding some that I can link together.

Better Blogging: Comments and Forums. Two Days in One.

For today's project on 31 Days to Building a Better Blog I started out with search for and join a forum on your blog's topic.

Join a Forum
I thought about it, searched around and realized, my blog doesn't really have a topic. It's a place to post my articles, post pictures, post family updates, tell people about our travels, rant about work and pretty much whatever I want to put on it.

Instead I found two general forums and started reading and browsing. I don't really enjoy chatting in forums or trying to keep up with them so I am using them to see if there is any valuable information about blogging that I can use. I like playing online, I just don't want to be in a forum chatting all day.

Comments
The next project I took on was email a new reader. This was a bit of a downer for me. I don't know who reads my blog because I have very few people commenting on the actual blog. I know my friends, husband, kids, family and coworkers read it but, other than that, I don't really know who reads my blog.

Instead, I went to the comments section to see if I could get ideas. Low and behold! There was a new comment from a new reader. I was thrilled but there was no way of getting a hold of her. There was no email address and the only link was to another website. So I replied to her comment on my blog instead. I also made a note to check the comments section every day or two and reply to every comment made on my blog.

Lessons Learned?
While the blogging forums aren't that much of a help right now, I now have two places I can turn to for guidance, ideas and just general blogging chit chat.

As for the comments, I never really put a lot of thought into replying to the comments made on my blog. I read them, they made me smile or laugh or touched me in some way. I rarely replied though and I am not sure why. From a person's point of view who reads the blogs, I can see the point though. It just never occurred to me to reply.

I am learning a lot and I hope the next lessons help as much as these have. I'll keep posting my updates on my learning adventures in blogging better!

Better Blogging: The Dead Link Hunt!

I decided not to do everything in order while trying to build up my blog. I figured if I pick a topic a day, one that is relevant at the time, then I will still make it through the 31 Days to Building a Better Blog project. I scanned the list and one of the topics really jumped out at me. Day 23 is "Go on a Dead Link Hunt".

Since I have a lot of time on my hands, I manually went through every month in my archives searching for links that no longer work (AKA dead links). At first my goal was simple: Only look for links! But as I started searching for links, I started reading my past entries. I laughed, I cried, I pondered, I went back over it looking for dead links because I forgot what I was doing and was too busy reading old entries.

Just for kicks and giggles, I wanted to share two posts from way back... I nearly peed myself laughing!

Earplugs Please! Apparently I was in a crappy mood when I posted this. I vaguely remember when this happened but I didn't remember blogging about it. Now this I laughed at until I had to go to the bathroom!

Sail by Braille Oh yes, I DO remember that night! All to well! I was really having a trip down memory lane on this one!

Back to the Dead Links

As of now, and after 5 hours of surfing my blog, there shouldn't be any dead links. Well, except for the couple of months in 2006 where you can't click on ANY link anywhere on the blog. But the rest of the blog has all working links. If you find one I missed, shoot me an email at blogwriter at gmail dot com!

Dead Link lesson I learned?

In the beginning of my blogging experience I didn't add links to my posts. I didn't know how, I didn't want to and I didn't see the need for them. Then, apparently sometime in 2005, I figured out how to create links and went stupid with it. Every post for several months had links all over the post. Links to silly .jpg pictures, links to Wikipedia articles, links to YouTube, Facebook, twitter and every site imaginable.

Looking back at these posts I thought they looked like a link whores dream come true but it also made them look... BAD! So I removed a lot of the links that really weren't necessary, fixed the broken links and removed a sentence or two from back posts about links that no longer worked to make the post read better.

It also made me realize that I need to be careful about adding too many links to a post. I like adding them to ingredients in recipes, like the Buckwheat Oat Amaranth Biscuits, because I don't always use common ingredients. But I learned from looking back at posts from years ago how they must look from the new reader who is just now stumbling across my blog.

From now on, I will be more careful with adding links. Not that I am never going to add them, but I will make sure they are relevant to the post and aren't covering every other word like this:

I love blogging! But I will definitely watch the dead links.
Some of my posts were that bad! Thanks to ProBlogger for the great tip to keep my blog looking great. I always hated dead links on other sites. I never really thought of going all the way back looking for them on my blog.

My next task: Working on a "Sneeze Page".

Building a Better Blog

While surfing the net about what tabs I should add next to my about me and other tabs, I ran into ProBlogger on the net through his article 31 Days to Building a Better Blog. It really got me thinking about my blog. I need to do more with it and spruce it up a little, wipe off the cyber dust and make it beautiful again. I mean, really do something besides change the background at my every whim.

So I decided I am following the steps in his article and I'll get this blog moving a little again. Plus I have a list from ProBlogger called 98 Blog Tips for a Lazy Sunday. I am going to go through those too. This should give me something fun and productive to do during the next month since walking and cleaning hurt too bad and I'm not working any at the moment. It should also give me enough momentum so that when I finally go back to work I can keep up with my blogging.

I plan to journal this on here too so if you want to follow along, I'll add a tag to this post or a link or something that you can follow. UPDATE: Here you go! Click here!

Gluten Free Buckwheat Oat Amaranth Biscuit

Since I found out all my allergies back in August 2010, I haven't been able to find a bread I can eat. For the most part, I don't miss it at all, or at least that is what I have tried to convince myself. It didn't work. I want a sandwich, or biscuits or something!

I spent the last the last year searching and experimenting with recipes trying to find ANY bread I can eat. Either they can out like bricks (I could built houses with some of the bread recipes) or they looked beautiful but tasted like crap.

This week, I was in another experimenting mood and found a biscuit I can eat, that tastes great (everyone is eating them... my kids, guests, friends) and that have a lovely bread feel to them. Here is the recipe!

They taste great with gluten free gravy!

Gluten Free Buckwheat Oat Amaranth Biscuits
Makes 12

Nutritional Info
Calories 125.5
Fat 5.9
Carbs 15.1
Protein 3.5

Ingredients:
Preheat the oven to 450.

Mix all the dry ingredients together in a bowl (from oat flour to buttermilk powder)

Add the oil and water. Stir thoroughly.

Spoon onto a greased cookie sheet. I use an ice cream scoop and get a beautiful 12 biscuits with a teensy bit left over. They don't expand a lot so you can put them a little close together.

Bake for 10-12 minutes (I usually go the whole 12 minutes).

Let cool and enjoy.

I LOVE these with butter and blackberry jelly. I keep meaning to make a sandwich with them but they don't last very long.

I got smart today and made a buckwheat/oat flour mixture by mixing 1 part buckwheat flour to 1 part oat flour. I think I did 3 cups each. I mixed them together well and put them in a new container by themselves. Now when I go to make the biscuits, I'll just add 1 and 1/2 cups of the mix. I am good! And so are the biscuits!

Crochet Slipper Socks!


I have been crocheting slipper socks out of complete boredom. This is my third pair of slippers. I am keeping these! I made them with two pieces of yarn crocheted together. They are really warm and will come in handy this winter.

Filewise Filing System is no more? I am devastated!

UPDATE: Goldie C, a reader of the blog sent me links to the FileWise system. I decided to take it upon myself (after learning 1 out of 5 test people can't open the file... bummer) to put the whole system online! Call me insane... but I am in the process RIGHT NOW! Eventually it will be complete. THANK YOU GOLDIE!!! Here is the Link... FileWise Blog I am constructing.

Okay... you can now continue on to the rant...

I have used the Filewise filing system for years now. I found it while I was living in Tennessee and started using it right away. I love it! I started cleaning up my files that went to hell between move after move from RV to boat to van to various storage units while we lived in San Diego. Since I have plenty of time on my hands, I figured I'd get all my piles of papers and file folders that are completely disorganized and start getting it together again.

One problem, I can't find my filewise index that tells where each thing goes. I know where some of them go. The paid bills are in E-4... or is that E-1? And personal stuff is the L section, Or maybe it's home. Well, okay maybe not as well as I would like to think. So I went to file folder A-3 which houses the Filewise Index. It tells you where to file each document and sheet of paper you have. I nearly fainted! It's not in the file folder at all. I have no idea where it is either.

I immediately started searching the internet for the program so I could see if I could buy just the index or maybe download a trial version so I could just print off that file. Hey, I paid for it once, I feel okay doing that! But it turns out that they are no longer in business. My boring little world is crashing around me right now. I am pouting. Not really.

After that I started searching for file systems and found one but being the routine stickler that I am, I do not like change and having to change file systems just blows my world away. I hate every second of it. Eventually I will order the system and let you know how it works but in the meantime, if anyone happens to have the Filewise Index that tells you which folder to file each document in, if you could pretty please email me, I'd really appreciate it.

My inflammatory markers are elevated, cough syrup anyone?

I got a call from the doctors office today. The CMA told me that my lab results show that my inflammatory markers are slightly elevated. I have no idea what that means. I guess I should have asked. I'll call tomorrow and ask. All I know is that I am still in a lot of pain. The Tramadol isn't helping at all. My back burns insanely and I have become a touch of a hermit because of it.

I don't go to the store if I can find any way to avoid it. I usually end up in tears by the time I am done. It's agony to walk through my house anymore, much less a whole grocery store. The most places I go are to the mail store (they bring my mail out to me), Nikky's house, and Town Pump. I have no life now. But I have to say, I have had fun crocheting!

I will have to post some of my crochet projects sometime. I am making about five blankets, a purse, matching crochet hook bag for my purse and matching slippers. I have a lot of time on my hands so I will have plenty of projects to do and complete! I also decided that since everyone is getting sick, it was time to make couch syrup. I love my homemade cough syrup!

So I went to Nikky's house and we made three batches of cough syrup. Cherry with onion, cherry without onion (for the onion allergic) and strawberry with onion. I have to say, I have never had a strawberry batch turn out like this before. We made two batches in one and somewhere along the way it went wrong. The finished product looked like blood and pus mixed with a little vomit and smelled like rancid garbage. My guess is that we used the wrong onion. The cherry syrup mix turned out wonderful! I ended up taking some last night and it works like I remember it to!

For the rest of today, I will be working on updating all my blogs, writing, posting recipes and working on my book. Today is just going to be a writing day! At the end of the day, I will start my very own herbal book! I am excited!!!
